Not all sugar hits your blood the same way, and the order you eat it in changes more than most people realise. Here's what actually happens after that first bite, why the bread basket deserves a little patience, and why we picked the sugar we did.
GI in one breath
Glycemic index (GI) measures how fast a food spikes your blood sugar. The scale runs from 0 to 100 and pure glucose sits at 100. High GI foods like white bread, candy or that second croissant dump sugar into your blood fast. Low GI foods release it slowly and give you steady energy instead of a rollercoaster.
So what actually happens during a big spike? Your pancreas floods your blood with insulin to pull all that sugar into your cells as fast as possible. That often overshoots a little, so your blood sugar dips back down below where it started. That dip is what you feel as the crash: sudden hunger, foggy focus and a craving for something sweet all over again, sometimes within the hour. It's mostly an afternoon energy problem, not a medical emergency, but if it happens meal after meal, day after day, your cells can gradually respond less well to insulin over time.
GI alone is a bit of a liar
Here's the twist nobody tells you. Watermelon has a high GI, almost as high as table sugar. Should you fear watermelon? No. GI only tells you how fast sugar hits, not how much of it is actually in a normal portion. That second number is glycemic load (GL) and it's the one that matters day to day.
GL is calculated rather than tested separately in a lab. The formula: GL = (GI × grams of carbs in your portion) ÷ 100. It folds speed and quantity into one number, scored on the same scale as 50 grams of pure glucose. Here's how that number is usually read:

A watermelon slice is mostly water. It hits fast but there's barely any sugar in there to hit with, so the actual load stays low. A can of regular cola, around 35 grams of sugar and a GI near 63, lands you a GL of about 22. A portion of white rice, 150 grams cooked with roughly 40 grams of carbs and a GI near 73, gets you to about 29. Both in high territory, and both the kind of number behind the crash we just described.
The cheapest health hack you already own
Here's the part worth remembering, because it costs nothing and changes nothing about what's on your plate. Just the order you eat it in.
Picture carbs landing in an empty stomach. There's nothing to slow them down, so they get digested and dumped into your blood fast.
Now put protein or fat in first. Your stomach empties more slowly, so everything that follows arrives in your gut at a trickle instead of a flood. Add vegetables too and their fibre acts almost like a net, trapping sugar molecules and making them work harder to reach your gut wall. Same meal, same calories, just a sugar release that happens more slowly.
Researchers at Weill Cornell Medicine tested this directly. People with type 2 diabetes ate the exact same meal twice, once carbs first and once vegetables and protein first with carbs last. Blood sugar spikes after the meal were up to 37% lower when protein and veg came first.
Translate that to real life. That bread basket the waiter drops on your table before you've even ordered is a glucose spike waiting to happen. Next time, park it off to the side. Order something with protein or a salad first, and let the carbs come last if they come at all.
What that has to do with ZUUT's sugar choice
The whole point above is that speed matters as much as quantity. That's the same lens we used when we picked the sweetener for ZUUT's own whey, so let's turn it on ourselves for a second.
Our whey has three ingredients: whey, vanilla and unrefined coconut blossom sugar. The coconut sugar makes up 13.8% of the formula.
A single serving is 32.6 grams. According to our own product label, that serving contains 7.5 grams of total carbs, of which 6.52 grams are sugars, the fast-acting part that a GI value actually measures. Published GI testing on coconut blossom sugar lands somewhere between 35 and 54, depending on the study. Run our sugar content through both ends of that range and here's what you get:

Compare that to the cola's 22 or the rice's 29 from earlier. Nowhere close to a meaningful spike.
So we didn't pick coconut blossom sugar to dodge a spike. At this dose, sucralose or stevia wouldn't have caused one either. That was never really the trade-off. We picked it for two other reasons.
First, processing. Most stevia used in shakes and protein products isn't a leaf in a teabag. It's an extracted and purified compound, usually rebaudioside A or M, often made using solvents or enzymatic fermentation with genetically modified yeast. Sucralose is sucrose that's been chemically chlorinated through a multi-step lab synthesis. And don't get me started on acesulfame-K which is built from scratch in the lab. Coconut blossom sugar is pure and unprocessed: just heated and dried palm sap, sometimes called nectar. No solvents, no lab-grown yeast and no chlorination.
Second, most lab studies test a single glucose challenge over a few hours in healthy, lean people, and mostly find no measurable difference between sugar and non-nutritive sweeteners. A smaller and less talked about study (Suez et al., 2014) had healthy volunteers consume the maximum accepted daily dose of artificial sweeteners for a week. Four out of seven developed measurable glucose intolerance, tied to shifts in their gut microbiome.
Glucose intolerance means your cells stop responding as well to insulin, so sugar lingers in your blood longer after you eat. It's one of the early steps on the road to type 2 diabetes. Not everyone in the study reacted the same way. The effect seemed to depend on each person's existing gut bacteria, which is exactly the kind of thing a one-off lab test won't catch. It's early, individually variable science, not a verdict. But it's enough for us to prefer an ingredient with a few thousand years of track record over one invented in a lab last century.
